Highgrove House Hotel was Bill and Cathy Costley's first venture and it led to the creation of a nationally renowned hospitality group that includes luxury hotels and restaurants.
Bill's influence in cooking and hospitality has inspired numerous chefs and restaurants across Scotland.
Andrew Costley is now the head chef for the group and Bill is regularly heard saying that Andrew is the best chef he has ever seen.
Over the years the Costley family has invested millions over the years in the development of the house, grounds and facilities to maintain its status as one of Scotland’s finest five-star hotels, spas and restaurants.
Almost immediately after launch in the early 90s, the hotel achieved 5* by the Scottish Tourist Board (now VisitScotland) and the restaurant (now Bisque) achieved 3AA red rosettes.
Bill & Cath Costley are held in great respect by their peers within the business community and hospitality industry. A Master Chef at 21 years old, Bill also has a great passion and knowledge in art and is a keen artist himself.
His outstanding contribution to the hospitality industry has been recognised by the honorary Doctorate bestowed upon him from the University of West of Scotland in June 2019. Adding this to the list of accolades to his name including a Lifetime Achievement award from the Scottish Licence Trade Association and the Gordon & MacPhail Award for Success in Business at the Scottish Bar and Pub Awards in 2017.
Following in his father’s footsteps, Executive Head Chef Andrew Costley also has a passion for cooking, his menus are modern and reflect the sophisticated tastes of discerning diners.
Andrew and wife Dawn are visionary Directors with the Company and have forged enduring relationships with guests and suppliers.
